Also known as Bael, Bilva or Beli, the Stone Apple has been revered across Sri Lanka, India and Southeast Asia for over 3,000 years. Its presence in ancient temples and scriptures links it to Lord Shiva, where the bael tree and its fruits are considered sacred offerings, symbols of balance and divine will.
Medium-sized and almost spherical, the fruit is encased in a hard green-grey shell that must be cracked open like sacred armour. Inside lies a deep golden-orange pulp filled with fibrous segments and rich, fragrant sap. The aroma is unexpectedly floral, releasing soft notes of rose, lime and sun-dried fruit.
The taste is complex and grounding, earthy, tangy and faintly bitter with hints of sweet tamarind, caramel, toffee, date, smoky citrus and spiced wood. The flesh is sticky and resinous, a texture that invites slow presence as you eat. At its peak, it holds echoes of marmalade, caramel and incense all in one bite.
Traditionally eaten fresh or pressed into a cooling summer sherbet, the pulp is also used in Ayurvedic teas, chutneys and healing tonics. Roasted green bael is considered one of nature’s most powerful digestive restoratives and is widely used to rebalance the gut and nervous system.
