Santol is a like Mangosteen giant, more grounded cousin. Fondly known as Wild Mangosteen or Cotton Fruit, this extremely rare and almost unheard of fruit thrives across the humid orchards of Thailand, Cambodia and Laos, where its softly wrinkled golden skin and cottony white flesh are a beloved seasonal treat. Peel away the fuzzy rind and you’ll find a pillowy interior, spongy, juicy and best enjoyed by sucking the flesh from its smooth seeds.
The flavour dances between a gentle milky sweetness and a tangy, floral citrus note, sometimes drifting into an almost umami savour that surprises first-time tasters. The balance of sweet and sour shifts with the tree’s age and the sun’s generosity, giving each fruit a story of its own.
