Cactus Fig, also known as Prickly Pear, is the fruit of the resilient cactus plant. Beneath its spiny skin lies a jewel-toned flesh, vibrant with seeds and bursting with juice that tastes like earthy watermelon touched with subtle hints of strawberry. Colombian varieties are prized for their plumpness, sweet firmness and long shelf life, though harvests also come from Egypt and Italy, each with differences in again, shelf-life, rarity but also in flavour and colour.
