Rath Kessel, Sri Lanka’s rare red banana, ripens into a striking crimson skin that conceals soft golden-orange flesh touched with faint pink hues. Creamy and sweet with hints of raspberry and mango, it is more aromatic and flavourful than the common Cavendish banana.
The vivid red colour comes from anthocyanins, natural compounds that protect the fruit against the fierce tropical sun.
